Turkish coffee is prepared by brewing very finely ground dark roasted coffee beans in a pot called a cezve with water and sugar to taste.
Traditionally Turkish coffee is boiled in a pot made of copper although other metals such as brass and stainless steel are also used. A teaspoon is used both for measuring the coffee and stirring the coffee and sugar in the water. A low heat is generally used to brew Turkish coffee so that it does not boil to quickly and consequently burn.
Turkish coffee is a method of preparation with a specific coffee grind, not a kind of coffee. Beans for Turkish coffee are ground or pounded to the finest possible powder, finer than any other type of coffee e.g. espresso coffee or instant.
The best Turkish coffee is made from freshly roasted beans ground just before brewing. Turkish coffee can be bought and stored as any other type, although flavor and aroma is lost with time. An airtight container is advised.
While there are some variations in making and preparing Turkish coffee the original and traditional method consists of putting the desired amount of ground coffee with water and sugar to taste in a copper pot and boiling until first rise. Some will also wait till second or third rise until sitting and pouring coffee into cups.
A well prepared Turkish coffee has thick foam at the top called a kopuk and is served and enjoyed hot.
